Hi, I'm Heidi Dehncke-Fisher and welcome to About.com Food. Today I'm going to make salade nicoise. This popular dish originated in Nice, France. Much like any dish there have been innovations - today we are making it with tuna for two.Salade Nicoise Ingredients
You will need:- 4 cups of lettuce of your choice
- 1/4 pound of new potatoes
- 1/4 pound of French green beans
- 1/2 pound of sushi quality tuna (or the tuna of your choice)
- 2 eggs
- 1/4 cup of nicoise olives
- 8 ounces of tomatoes
- 6 anchovy fillets
- capers to taste
Salade Nicoise Vinagrette Dressing Ingredients
While the potatoes, green beans and eggs boil, you can prepare the vinaigrette dressing:- 3 tbsp balsamic vinegar
- 1 garlic clove minced
- 2 tsp Dijon mustard
- a little salt and pepper seasoning
Marinate and Sear the Tuna
I like to marinate the tuna prior to cooking in sesame oil, rice vinegar, minced ginger, soy sauce and garlic - after 5 minutes it's ready to sear, one minute on each side.Make sure the pan gets nice and hot, then take some of the marinade and put it in the pan for the tuna to cook in. Add the tuna and pan sear for about a minute on each side.
Cut the Tuna
When cutting the tuna, it's a lot easier to get good slice when you cut across the grain. Notice how the grain curves like this, so you want to be cutting it this way. It's perfectly cooked.Assemble the Salade Nicoise
Now we can make the plates. The lettuce, tomatoes, beans, olives, and capers can be tossed with the dressing first. Then we layer the eggs and the tuna, and drizzle a little more vinaigrette.
