Make Breakfast Crepes

with Thomas Walker

Treat yourself to a delightful breakfast with simple but tasty crepes. These thin pancakes can be filled with any of your favorite fruits, or top them with butter and maple syrup.

Hi, I'm Thomas Walker for About.com Food. I'm here to show you how to make breakfast crepes.

Breakfast Crepe Ingredients

For a family of four, you'll need:
  • 3 large eggs
  • 1 cup and a 1/4 of flour
  • 1 cup and a 1/2 of milk
  • a dash of salt
  • about 2 to 3 tablespoons of melted butter or margarine

Mix the Dry Crepe Ingredients

Begin by measuring the flour and placing it in a bowl. Add the salt.

Mix the Wet Crepe Ingredients

Next, pour the milk and set it aside. I prefer 1% milk. Now crack the eggs and whisk them thoroughly. Pour the eggs and the milk into the blender and put the lid on the blender tightly. Use the mix setting for about one minute.

While the blender is still running, carefully remove the lid and add the flour mixture one spoon at a time.

Melt and Add the Butter

Turn off the blender, and measure the butter or margarine into a small bowl. Cover and melt. So I crumble up the wax paper because it fits over the bowl a lot easier that way. So you move it over to the bowl, and kind of wrap it around it. When you crumble the wax paper, it always helps to hold the wax paper onto the bowl, and then you can put it into the microwave and it won't splatter all over the inside of the microwave.

Cook the margarine for about thirty seconds on high. Then, with the lid on, re-start the blender, carefully remove the lid, and pour the melted butter or margarine into the mixture, mixing for about a minute.

Heat the Crepe Skillet

On the stove, turn a burner to medium low heat. I prefer a cast iron skillet because it distributes the heat evenly. When it's hot, rub a little margarine on the surface.

Cook the Batter

Now, carefully pour about 1/4 cup of the mix onto the skillet, making sure that it spreads thinly and evenly. Rotating the skillet from side to side will help even out the batter. Bubbles will begin to form as it cooks. And, when the edges brown slightly, it's time to flip the crepe. Do so using a spatula.

The heat may need to be adjusted if the crepe browns too quickly. When done, place the completed crepe on a plate and repeat the process. Each crepe takes three to four minutes to cook, that's about two minutes per side.

Serve the Breakfast Crepes

Serve with your favorite fresh fruit, and top with whipped cream, or simply with maple syrup and butter. Your flavor options here are endless.
