Hey guys, Greyson Ferguson here with About.com. Today, we are going to make coquilles Saint-Jaques.Coquilles Saint-Jacques Ingredients
To start, you'll need:- 6 tablespoons of butter
- 3/4 pound of scallops
- 1 tablespoon of lemon juice
- 1/2 cup of sliced mushrooms
- 1 chopped green onion
- 1/4 cup of white wine
- 2 tablespoons of flour
- 1/2 teaspoon of salt
- 1/8 teaspoon of white pepper
- 1 cup of half and half
- 1/8 teaspoon paprika
- 3 tablespoons of bread crumbs
- 1/4 cup of grated Parmesan cheese
Preparing Your Coquille Saint-Jacques
Add in two tablespoons of butter and the scallops into a frying pan and cook on medium heat for two minutes, then pour in the lemon juice. Place another two tablespoons of butter into the frying pan and add in the mushrooms and onion. Cook the mixture for five minutes or so, or until the vegetables are tender, then pour in the wine. Bring the wine to a boil and pour the combination into a bowl. Insert the remainder of the butter into the frying pan, then stir in the flour, salt and pepper. Combine the half and half and stir until thick, then combine in the paprika and the mushroom and onion mixture. Pour the mixture into a baking sheet (or in scallop shells, if these shells are available at your local super market) and bake for 15 minutes in a 400 degree oven. Evenly spread the bread crumbs and Parmesan cheese over the top of the scallops. Remove the dish from the oven, wait a few minutes to cool and serve as an appetizer before any meal.There you have it.
