To begin, you'll need:- 1 pound of cod fillet
- 1 cup of extra virgin olive oil
- 1 cup of milk
- 1 clove of garlic
Preparing the Brandade de Morue
Add the cod into a food processor, then blend the meat up into a thick mash. Pour in a quarter of the olive oil into a frying pan and set the burner to low heat. Pour in the remaining of the olive oil and the garlic into a separate sauce pan on low heat, then heat the milk on low heat in a third saucepan. Pour the cod into the garlic and olive oil mixture. Whisk the cod and add in one tablespoon of the heated olive oil, followed by one tablespoon of the milk. Continue with this process while whisking the cod until all the liquid is absorbed. The entire cooking process, including prep time, is going to take less than an hour to complete. Once finished, serve with chips or garlic bread.And there you have it.
