Hi, I'm Nadia Chapman for About.com and today I am making Brandade de Morue, but doing it "canapé" style. Morue means “Cod” in English. This will be the perfect finger food for your next happy hour, and a fun alternative to this traditional French dish.Brandade Canapés Ingredients
Here's what you will need for this recipe:- 5 grams, or 17 ounces, of cod; that is about 4 medium slices of fish
- 4 to 5 medium-size potatoes
- 1/2 cup of crème fraîche, or more
- 1/4 cup of olive oil
- 1 big garlic clove
- Fresh parsley
- Fresh squeezed lemon juice
- Salt
- Pepper
- Shredded cheese; I used Emmental, but cheddar or Parmesan will be just fine
- 1 Baguette
Making the Brandade Canapés
Peel the potatoes, and boil in water until cooked. Poach your clean fish for about 10 minutes in boiling water. Put the cooked fish into a large bowl, and mash a little. Add the olive oil, and the juice of about half a lemon to the fish. Mix well; you will get close to obtaining a puréed texture. Drain, and mash the potatoes, and add to the fish. Add the crème fraîche, garlic, parsley, salt and pepper and mix everything together. Slice the baguette, and place the bread in an oven safe dish, or baking sheet. Top each piece of baguette with a generous amount of the brandade de morue. Finally, top your canapés with cheese. Place into the stove at broil, or high temperature, until the cheese is melted.
