Transcript:How to Make Gluten-Free Chocolate Chip Cookies

Hi, I’m Ilyse Schapiro, pediatric dietition and nutritionist, here for About.com to show you how to make great wheat-free chocolate chip cookies.   They’re super easy to make, any child with a wheat free allergy can enjoy and they’re delicious.

Gluten-Free Cookie Ingredients

So, to make these wheat-free chocolate chip cookies, first you’ll need 1 cup of margarine, 1 cup of brown sugar, 3 egg whites, 1 tsp. vanilla, 1 cup tapioca flour, ¾ cup rice bran, 1 tsp. baking soda, 1 tsp. salt, 2 cups quick cooking oats,  1 cup chopped pecans, and a package of chocolate chips. 

Mix the Gluten-Free Cookie Batter

So to make wheat-free chocolate chip cookies, you’re going to beat in a bowl, the margarine and the sugar until this becomes creamy.  Next you’re going to beat in the egg white and the vanilla. So, in a separate bowl you’re going to sift together the flour, rice bran, baking soda and salt.  And if you don’t have a sifter, feel free to use a fork to mix it all together.

So, next you’re going to mix the flour mixture into the creamed mixture.  And you’re going to beat this very well.  So, next by hand you’re going to stir in the oats, the nuts, and finally the chocolate chips and you’re going to mix this all together by hand.

Next, you’re going to drop this by rounded teaspoons onto a greased cooking sheet.
