Hi, I'm Ilyse Schapiro, pediatric dietition and nutritionist and I'm here for About.com to show you how to make my dairy-free fudgy no-bake chocolate oatmeal cookies. I love these cookies -- they have a hint of chocolate, some oats for crunch, and even some peanut butter that your kids are gonna love -- and of course, they're dairy-free.
Ingredients for Dairy-Free No-Bake Chocolate Oatmeal Cookies
So, to make my fudgy, no-bake chocolate oatmeal cookies, first you'll need:
- 2/3 cup maple syrup
- 1/4 cup vegetable oil
- 5 tbsp. unsweetened cocoa powder
- 1 tsp. ground cinnamon
- 1/2 cup peanut butter
- 1 cup rolled oats
- 1 tsp. vanilla extract
Prep the Dairy-Free No-Bake Chocolate Oatmeal Cookies
So, to make the fudgy, no-bake chocolate oatmeal cookies, you're going to want to combine in a saucepan over medium heat: the maple syrup, the oil, the cocoa powder and cinnamon. You're going to want to boil this for three minutes, stirring pretty consistently. So, next you're going to remove it from the heat, you're going to stir in the peanut butter, the rolled oats, and next the vanilla, and you're going to mix this until it's very well blended.
