Transcript:How to Make Dairy-Free Cinnamon Sweet Potato Cookies
Hi, I'm Ilyse Schapiro, pediatric dietition and nutritionist, here for About.com to show you how to make my cinnamon cookies. These are great and dairy-free. They're rich in vitamin A and fiber from the sweet potato and actually made with whole wheat flour, which as a mom and a nutritionist, I feel great giving my kids.
Ingredients for Dairy-Free Cinnamon Sweet Potato Cookies
So to make these dairy-free sweet potato cookies, first you need:
- 2 cups of whole wheat pastry flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 3/4 tsp. ground cinnamon
- 1/2 tsp. salt
- 1/2 cup grapeseed oil (or you can actually use 1/2 cup canola oil or any other neutral tasting baking oil)
- 1 cup sweet potato puree
- 1 cup packed brown sugar
- 2 tbsp. of maple syrup
- 1 tsp. of vanilla extract
Make the Dairy-Free Cinnamon Sweet Potato Cookies
So, in a bowl, you're going to mix the flour, baking powder, baking soda, cinnamon, and the salt. And you're going to mix this up. In a large bowl, you're going to mix the oil, sweet potato, sugar, maple syrup, and the vanilla extract. And now you’re going to combine these. So, we're going to mix this all together and then we're going to slowly incorporate the dry mixture. And as you mix, you may notice that the dough gets rather sticky -- that's actually pretty normal.
Bake the Dairy-Free Cinnamon Sweet Potato Cookies
After you're done mixing, if you can, set this aside for 30 minutes to chill. You'll actually get better results if you do that. Then we're going to drop it by the spoonful onto the baking sheet and cook in the oven at 350 for 10-14 minutes until they no longer look wet. And if you want to make these a little bit more exciting, you can put some of your favorite topping on them: raisins, chopped nuts, dried cranberries, even chocolate chips -- whatever your kids would like.
