Transcript:How to Make Smoked Fish Brine

Hi, I'm Roblé for Today I'm going to show you how to make a brine for smoked fish.

A brine is used to hydrate and to flavor fish before you smoke it. In the smoking process, a lot of moisture is lost -- by brining you are replacing that moisture before it is lost, if you will. Here is how you do it.

Ingredients for the Smoked Fish Brine

Here are our ingredients:
  • 1 cup white wine
  • 1 cup soy sauce
  • 1 cup water
  • 1/2 cup sugar
  • 1/4 cup kosher salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon cracked black pepper
  • 1/2 teaspoon chipotle hot sauce

Make the Smoked Fish Brine

What you want to do is to combine all of your ingredients into a microwave-safe bowl. You are going to put it in the microwave for about two minutes. Once it comes out of the microwave all of your dissolvables like your salt and sugar will be dissolved.

So, here is your brine mixture out of the microwave. Take a whisk and give it a nice little stir to fully dissolve the salt and sugar. At this point you want to put this in the refrigerator until it gets cold. It should take about an hour depending on how cold your fridge is. It should be at least 40° or lower.

Brine the Smoked Fish

So here you have your cold fish brine. The next thing you want to do is take your fish, here I have some sable, and drop it into the brine. Give it a little mix around. We are going to put this back in the fridge for at least 20 minutes. You can let it go for as much as 12 hours.
