Transcript:How to Make Sauteed CalamariHi, I'm Roblé for About.com. Today I'm going to show you how to make a quick and easy sautéed calamari. Here we go.
Ingredients for the Sauteed CalamariHere are our ingredients:
- 1 pound cleaned calamari
- 1 teaspoon chopped garlic
- 1/2 teaspoon crushed red pepper flakes
- blended olive oil
- 1/2 lemon
- 1 teaspoon chopped parsley
- kosher salt
- fresh cracked black pepper
Clean and Prep the Calamari to Make Sauteed CalamariThis calamari that we have here is like most calamari you’ll find in a grocery store. It’s partially cleaned meaning that all of the guts have been taken out. The quill has been taken out of the middle. There is still a little bit of preparation that you need to do to this calamari.
First, you will see that they are already little wings that hang off of the tail end of the calamari. You want to just pull those off. They are pretty tough and not very palatable. We will go through and pull all of the wings off of our calamari. All done with that, now we will deal with the tentacles. You want to go through and make sure that there is nothing hard in there.
This one right here had a hard piece inside. You can feel that it is tough. I can't tell if you can see but the head is still connected. You want to just come with a knife and remove that tough part. So, another thing that I'm going to do is to go through and cut down some of these tentacles. Some of them are pretty long. So, I will just cut it about halfway.
Okay, now we have one more step. I'm going to take all of the bodies right here and slice them. Take a little tip off of the top. We won't be needing that part. I was going to come through here cutting about 1/3rd of an inch all the way through. Each piece will look something like this.
Make the Sauteed CalamariThe first thing that you want to do is to add in a little bit of this blended oil, about a tablespoon or so. Wait for the oil to start to smoke. Mix it around in the pan a little bit. It's starting to smoke now. I'm going to add in half of my garlic. I'm going to mix this around in the the pan and let it get very brown.
It's browning, so I'm going to add in half of the red pepper flakes. Now, we're going to add in half of the calamari. Half of the calamari is in there. We are going to sauté this around. Season it with a nice healthy pinch of salt. We are going to sauté this for about 35 to 40 seconds. It cooks very quickly. You want to finish it off with a nice squeeze of lemon and some chopped parsley. Here is your sautéed calamari.
