Transcript:How to Make Tea Sandwiches

Ingredients for Cucumber Tea Sandwiches

For all of these sandwiches, you'll need thin-sliced white bread. For each recipe you're going to want to carefully cut the crusts off of the bread slices, until you're left with small neat squares of white bread, and each recipe will make about 20 sandwich halves.

To make cucumber sandwiches, you'll need:
  • 3 small cucumbers
  • 1 cup soft cream cheese
  • 2 cloves of garlic
  • One lemon
  • And salt and pepper

Instructions for Making Cucumber Tea Sandwiches

Peel the cucumbers and cut off the ends. Slice them into thin rounds less than ¼-inch thick.

Place the soft cream cheese in a small bowl. Mince the garlic cloves into the bowl, and zest the lemon and add the zest to the cream cheese. Stir until everything is well-blended, smooth, and free of lumps.

To assemble the sandwiches, spread a generous layer of cream cheese on each slice of bread. Layer the cucumber slices on one piece of bread, trying to cover as much bread as possible. Sprinkle with salt and pepper, then press another slice on top, then gently cut the sandwich in half along the diagonal.

Ingredients for Smoked Salmon Tea Sandwiches

To make smoked salmon sandwiches, you'll need:
  • 12 ounces smoked salmon
  • 1 cup soft cream cheese
  • 1 red onion, thinly sliced
  • 1 lemon
  • Salt and pepper

Instructions for Making Smoked Salmon Tea Sandwiches

Spread the soft cream cheese on one side of each slice of bread. Arrange the smoked salmon on top of the bread, and squirt or brush a little fresh lemon juice on top of the salmon. Add the red onion on top, then finish with a sprinkle of salt and pepper.

Top the sandwich with another cream-cheese-covered slice, and press gently. Cut the sandwich in half along the diagonal.

Ingredients for Chicken Salad Tea Sandwiches

To make chicken salad sandwiches, you'll need:
  • 1 cup chopped cooked chicken
  • 1/2 cup mayonnaise
  • 1/2 cup toasted slivered almonds
  • 1/4 cup chopped grapes
  • Salt and pepper

Instructions for Making Chicken Salad Tea Sandwiches

In a bowl, combined the chicken, almonds, grapes, mayonnaise, and salt and pepper. Stir until everything is combined and coated with mayonnaise.

Scoop a generous spoonful of filling onto a bread slice, and spread it all the way to the edge with a knife or spatula. Top with a second slice of bread, and cut the sandwiches in half to serve.

Ingredients for Egg Salad Tea Sandwiches

To make egg salad sandwiches, you'll need:
  • 8 eggs, hard-boiled
  • 1/3 cup mayonnaise
  • 1 tsp Dijon mustard
  • 1 tbsp chopped green onions
  • Salt and pepper

Instructions for Making Egg Salad Tea Sandwiches

You're going to think this is crazy, but I want you to grate your hard-boiled eggs. Use the large holes on a cheese grater and grate them into a large bowl. Grating the eggs gives your egg salad a wonderful fluffy texture that is lost when you chop or mash the eggs.

Once they're all grated, add the mayonnaise, mustard, chopped green onions, and salt and pepper to taste. Stir until everything is well-blended and coated with the mayonnaise.

Spoon some egg salad onto a slice of bread and spread it out to the corners. Top with another slice, and at this point you can tidy up the sides if you want. Cut the sandwiches in half before serving.

These tea sandwiches make a delicious addition to an afternoon tea. Try serving a mixed assortment of sandwiches on a bed of lettuce or kale for a beautiful presentation.
