Hi. I'm Krystyna Rittichier with About.com, and today I'll show you how to make Polish plum cake.

Ingredients for Polish Plum Cake

This simple homemade cake can be made with fresh or canned plums, and you can even substitute the plums with nectarines, peaches or apples. For polish plum cake you will need:

  • 2 ⅓ cups all-purpose flour
  • 2 ½ tsp baking powder
  • ¾ tsp salt
  • ¾ tsp sugar and ¼ cup sugar
  • ½ cup soft butter
  • 3 tbsp cold butter, diced
  • ¾ cup milk
  • 2 eggs
  • 40 fresh plums, pitted and halved or 2 14-oz cans whole purple plums, pitted and halved
  • ¼ tsp cloves
  • ¼ cup confectioners sugar (optional) 

How to Make Polish Plum Cake

Preheat your oven to 350 degrees. In a large mixing bowl, add the flour, baking powder, salt and ¾ teaspoons of sugar. Mix these ingredients. Add ½ cup butter, the milk and the eggs, then beat with an electric mixer for four minutes. 

Grease a 13 by 9 inch pan with shortening or cooking spray. Pour the batter evenly into the pan. Evenly space the plum halves by hand into the batter. Press them gently into the batter so that the tops are still visible. Cut the ¼ cup of sugar and the cloves with the cold butter. Sprinkle this mixture on top of the plums.

Place the cake in the oven and bake for 40 minutes. Remove the cake from the oven, and allow it to cool completely. As the cake cools, the plum juices will be absorbed into the cake to make it delightfully moist. Just before serving the cake, sprinkle the top with confectioners sugar for added beauty and flavor.
