Transcript:How to Make Mushroom Risotto
Hello, I'm Michael Sanchez for About.com. Today I'm going to show you how to make mushroom risotto, a creamy classic italian rice dish highlighted by the smoky flavor of mushrooms.
Ingredients for Mushroom Risotto
You will need:
- 1-1/2 cups of Arborio rice
- 1 quart of mushroom or chicken stock
- 1/2 cup of white wine
- 1/2 cup of chopped onions or shallots
- 1 cup of chopped mushrooms
- 4 tablespoons of butter
- 1 tablespoon of olive oil
- 1/4 cup of Parmesan cheese
- salt
You will also need measuring cups and spoons, 2 saucepans, 1 frying pan and a spatula or wooden spoon.
Prepare the Mushrooms for Mushroom Risotto
Bring the stock to a simmer in a saucepan, then lower the heat just enough to keep it hot. Melt 1 tablespoon of butter in the frying pan and saute the mushrooms. Once they're soft, remove them the from the heat and set aside.
Cook the Rice for Mushroom Risotto
In the other saucepan, heat another tablespoon of butter and the olive oil over medium heat. When the butter melts, add the chopped shallots or onions and saute for 2-3 minutes. Add the rice to the butter and oil and stir thoroughly until all the grains are coated. Cook for another minute.
Once the rice begins to let off a nutty aroma pour the wine into the pan and stir constantly until the liquid is fully absorbed. Add a cup of stock to the rice and continue to stir until all the liquid is absorbed. Repeat this process for 20-30 minutes or until the rice is tender but firm.
Finish and Serve the Mushroom Risotto
When you have a cup or two of stock left, add the mushrooms and continue stirring and adding stock until it's gone. Once the rice is cooked, remove it from the heat and add the remaining butter and parmesan. Salt it to taste, then serve.
