Dessert for Two: Cheesecake

Cheesecake recipes are relatively easy to downsize. If you'd like to make a smaller cake, simply cut the ingredients in half. If you'd like to make only two servings of cheesecake, you can find a variety of delicious mini-cheesecake recipes online to bake in ramekins or five inch baking dishes. 

Dessert for Two: Fruit Crisps

If you have a taste for pie, however, you may have some difficulty adjusting the measurements. Fruit crisps are a great dessert alternative to pie because the recipes make for an easy downsize. Try an apple, berry, or pear crisp with vanilla ice cream on the side and coffee.

Dessert for Two: Cakes

Ready to go cake mixes can also be a good option when downsizing for a smaller dessert. Use only a portion of the mix to bake a small 8 inch by 8 inch cake.

To do so, mix together 1 3/4 cups of cake mix, 2/3 cups of water, an egg, and 1/4 cup of vegetable oil. Pour the ingredients in a 8 inch square pan and bake for a half hour at 350 degrees. Top the cake with frosting or fruit. An 8 inch by 8 inch cake is more than enough for two people. Downsize further for two according to the size of your baking pan.

Dessert for Two: Ice Cream Cookie Sandwiches

If you're not interested in downsizing recipes, there are some desserts that freeze well for future use. Ice cream cookie sandwiches are a great example.

Prepare a full batch of chocolate chip cookie dough and place the proper amount of dough for each cookie on a small cookie sheet or plate. Place the cookie sheet or plate in the freezer. When they're frozen, remove the cookies from the plate or cookie sheet and place them in a freezer bag or covered container to remain frozen in the freezer.

When you're ready for your dessert for two, simply remove four cookies from the container in the freezer and bake them. Then, make sandwiches out of the cookies with some vanilla ice cream.
