Transcript:Easy Ravioli With WontonsHi, I'm Roblé for about.com. Today I'm going to show you how to make ravioli using wonton wrappers. We're going to stuff them with a mixture of a few different cheeses and herbs. Here we go.
Wonton Ravioli IngredientsHere are our ingredients:
- 24 wonton wrappers
- 8 ounces goat cheese
- 8 ounces ricotta
- 1/2 cup shredded Parmesan
- 2 teaspoons chopped parsley
- 1 teaspoon chopped thyme
- 6 leaves basil
- kosher salt
- black pepper
How to ChiffionadeThe first thing we are going to do is to chiffionade is basil. Chiffionade is a cut and this is how you do it. You take your basil and stack it up like it is right here. Then we roll it right up like a pinwheel. Then you just come across and make thin little slices all the way across. Take your time. You don't have to cut as fast as I'm cutting. Cut all the way down and here is your chiffionade of basil.
Combine the Ravioli IngredientsSo, right in a bowl we want to combine our ricotta, goat cheese, all of our herbs, salt, pepper, and our shredded Parmesan. So now I'm going to take a rubber spatula and mix everything together.
Cut the RavioliNow normally I would cut out the ravioli with a cookie-cutter. I left mine at the restaurant. Sometimes you have to be a little McGuyverish in the kitchen. I am going to use this cup to cut out our ravioli. So now we are going to cut out our ravioli. This cup is the perfect size. We are going to round them off. Press right through. And they come right out.
Stuff the RavioliAnd now to stuff our ravioli. Take a little spoon of our cheese mix. Pop it right in the center of the ravioli. Next step, all we have here is a little bit of water. This is going to help us seal up the ravioli. You want to go right around the edge of the round. Next step, we want to just fold it right over and pressed the sides together. Make sure you had a nice seal. Nice and tight. You don't want your cheese spilling out when you boil your ravioli. They are it is. There is your finished ravioli. You want to go right on to some parchment paper. Keep repeating this process until they are all done.
Cook the RavioliSo here we have a pot of boiling water. You want to salt the water. Salt it and tell it tastes like to sea. So now we are going to add our ravioli right into the boiling water. We are going to let them cook about three minutes or so. And you will know when they are done because the ones on the bottom right now will start to float. The ones that are on top, they are probably just floating because there are air bubbles in there.
While the ravioli are boiling, I'm going to drizzle a bit of extra virgin olive oil on a sheet tray. I'm going to spread it out with a brush. This is going to be the landing pad for my ravioli when they are done. I want to be gentle with them as they are very delicate. The ravioli have been cooking for three minutes and they are ready to be taken out of the water. Again, I'm going to be very gentle with them. Now I'm going to drizzle a little bit of oil over them. Garnish that with a little piece of thyme and here are your herbed cheese ravioli.
