Transcript:How to Make Chicken Noodle Soup

Hi, I'm Roblé for About.com. Today I'm going to show you how to make a quick and easy chicken noodle soup. Here we go.

Ingredients for Chicken Noodle Soup

Here are our ingredients.

  • 1 pounds of boneless chicken breast
  • 1 quart of chicken stock
  • 2 ounces dried linguine
  • 1/2 cup white onions (diced small)
  • 1/2 cup celery (diced small)
  • 1 tablespoon chopped parsley
  • 1 teaspoon thyme leaves
  • 1 teaspoon minced garlic
  • kosher salt
  • black pepper
  • blended olive oil

Recipe for Chicken Noodle Soup

First, we are going to take our chicken and dice it into small little bits. Take your chicken and slice it across. Number one to take our slices and cut them into thin little strips. Just like this. Next, cut it right across and you will have nice small diced chicken breast.

Preparing Pasta for Chicken Noodle Soup

The next thing we are going to do is to take our pasta and break it up into 2 inch pieces. Break it across like this. Then one more time like this. So, here we have a pot over medium heat. Go ahead and drizzle in a tablespoon or so of the oil. Once it starts to smoke I'm going to go ahead and add in the garlic. Just mix that around and wait for it to start to brown.

Once it starts to brown, add in the onions. you want to mix these onions around and let them sweat for about one minute. One minute later go ahead and add in the celery and it makes it right in. We are going to let this sweat in the pan. Sauté it for another 30 seconds. 30 seconds later, here is your time, go ahead and add that in. Or also going to add in one big healthy pinch of kosher salt and a few turns from the pepper mill. Mix that around a little bit more. Next we are going to take our chicken stock and add that right in.

Cooking the Chicken Noodle Soup

Once your liquid has come back to a boil and give it a little stir and then add in your linguine. Were going to let this boil for seven minutes stirring occasionally. Seven minutes later you want to add in your chicken. Go ahead and drop that right in there. Give it a good stir. You do not want the chicken to stick together. Once it comes back up to a boil you want to turn the heat off. Cover the pot and let it sit for five minutes. After that, add in your parsley. Give it a little stir.

Here is your chicken noodle soup.
