Transcript:How to Make Sweet and Sour ChickenHi, Cliff Wildman here with About.com Food. One of my favorite Chinese dishes is sweet and sour chicken. And today I'm going to show you not only how to make the dish, but how to make the sauce as well.
Sweet and Sour Chicken IngredientsFor ingredients we'll need two pounds of boneless skinless white chicken meat cut into chunks.
We'll need about a quarter teaspoon of ground ginger and garlic powder, a half a cup of milk, one cup of flour, two eggs, we'll need just a pinch of freshly ground pepper.
One green pepper, one red pepper and one yellow onion all cut into half inch bits. A twenty ounce can of pineapple chunks in juice. Two medium carrots cut into thin slices.
A half a cup of pineapple juice we got from the sweet and sour sauce. Three tablespoons of lemon juice. One cup of water, one quarter cup red wine vinegar, a quarter cup of sugar, two rounded tablespoons of corn starch, and a little red food coloring.
Prepare the Sweet and Sour SauceInto the corn starch we're going to pour a little water, maybe a tablespoon, and make a slurry mix of the corn starch. In a sauce pan we're going to add our water, pineapple juice, and then heat over high heat and slowly add the sugar and red wine vinegar, the lemon juice and the slurry. Continue to stir this you see as it heats up its going to start taking on the consistency of sweet and sour sauce.
Once it's boiling add some food coloring, color to taste. Set sauce aside.
Make Chicken CoatingIn a new bowl we'll put the milk and the eggs and mix that together well.
In another bowl place the flour, ginger, garlic powder, add some freshly ground pepper, and mix that together and now we're ready to cook!
Fry the ChickenFirst we'll prep the chicken to fry in some oil. Take some chicken, put it into the egg mixture, let it drain for a second, then drench in flour. add that to a large skillet with heated oil. I have about a half an inch of oil in this skillet. You want to cook until golden brown on one side then turn over. Once its cooked on both sides, remove to a paper towel covered plate to drain.
Stir Fry VegetablesWe'll finish the meal in a wok. So heat some vegetable oil up and add the peppers and, the onion and the carrots. Stir fry that until the onions begin to caramelize.
Add Sweet and Sour SauceAdd about a third of the sweet and sour sauce, stir fry that for a minute, add the chicken, add more sauce if you'd like, add the pineapple chunks, stir fry for a minute or two and you're ready to serve.
I'm going to serve this on a bed of rice, straight out of the wok. Let that cool for a minute before you eat it, but this is a fantastic recipe, check it out.
