Hi I'm Jen D'Amore for About.com, and this video is all about how to make stir-fry orange chicken using Rhonda Parkinson's recipe from About.com's Chinese food site.

Ingredients for Orange Chicken Stir-Fry

You'll need:
  • 4 boneless, skinless chicken breast halves, cut into 1-inch cubes

For the Orange Chicken Marinade

You'll need:
  • 2 tablespoons Chinese rice wine or dry sherry
  • 1 tablespoon cornstarch

For the Orange Chicken Sauce

  • 1/3 cup orange juice
  • 2 tablespoons dark soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon brown sugar
  • 1/4 teaspoon chile paste
  • 1 clove garlic, minced
  • 1 slice ginger, minced
  • Oil for stir-frying, as needed

Tips for Making Orange Chicken Stir-Fry

Remember to use safe practices for handling raw meat. Use a nonporous cutting or prepping surface wash your hands immediately after coming into contact with raw meat before touching anything else. And sanitize every surface and tool that may have come into contact with the raw meat.

Instructions for Making Orange Chicken Stir-Fry

Place the cubed chicken in a bowl, and add the marinade ingredients. Marinate the chicken for 30 minutes. Meanwhile, prepare the sauce by combining the orange juice, the soy sauce, sesame oil, brown sugar, and chile paste. If you find the orange flavor too overpowering, you can substitute water for some of the orange juice. Mince the garlic and the ginger. Heat the wok and add oil. When the oil is ready, add the garlic and ginger and stir-fry until aromatic. Then, add the chicken and stir-fry it until it changes color. Push the chicken up to the sides of the wok, making a well in the middle and pour in the sauce. Combine the sauce and the chicken and stir-fry for another minute and serve hot.
