Transcript:How to Make Egg Custard Tart

Hi, my name is Krystyna Rittichier and I'm here for About.com. Today, we're making egg custard tarts using a recipe from About.com's Chinese Food site. When finished, this recipe will yield 24 tarts.

Egg Custard Tart Ingredients

For the pastry dough, you will need:
  • 2 Cups flour
  • 1/3 Cup lard
  • 1/3 Cup butter
  • 4 tbsp Hot water, or as needed
For the filling, you will need:
  • 2 Eggs at room temperature
  • 1-1/2 Cups whole milk
  • 1/2 Cup sugar; superfine or castor sugar is best

Prepare Pastry Dough and Custard

Preheat the oven to 325 degrees. Grease the tart pans. In a large bowl add the flour, lard and butter. Cut the butter and lard into the flour with a fork until the mixture has the appearance of bread crumbs. Begin adding the hot water, kneading the dough until it has an even consistency. Cover the dough with wax paper and place this in the refrigerator. Place the eggs in a medium mixing bowl and whisk the eggs until they are smooth with no air bubbles. Add the milk and sugar, and stir these into the egg mixture.

Bake the Egg Custard Tarts

Roll out the dough on a lightly floured surface until it is about 1/8 of an inch thick. Begin cutting out circles that are 3 inches in diameter. When you are finished, you should have 18 circles of dough. Fit the dough circles into the tart shells. Pour the custard mixture into the shells, and bake in the oven for about 35 minutes. You know your tarts are finished when you insert a knife into the filling and it comes out clean. Allow the tarts to cool before serving.
