Transcript:How to Make Beef Chow Mein

Hi, I'm Stephanie Gallagher for About.com, and today, we're making a beef chow mein recipe from our Chinese food site.

Ingredients for Beef Chow Mein

For this recipe, you will need:
  • 8 oz. mung bean sprouts
  • 3/4 lb. flank steak, cut into thin strips
  • 1 Tbsp. oyster sauce
  • 1 tsp. soy sauce
  • kosher salt and freshly-ground black pepper, to taste
  • 1 tsp. cornstarch
  • 8 oz. dry wonton noodles or Chinese noodles

Instructions for Making Beef Chow Mein

Rinse the mung bean sprouts in a colander and let them drain while you prepare everything else. Place the beef in a bowl, and add the oyster sauce, soy sauce, salt and pepper and cornstarch. Mix well, making sure to coat the meat with the marinade evenly. Let the beef marinate for 20-25 minutes.

Meanwhile, bring a pot of water to boil, and add the noodles. Cook according to the package directions for "al dente." Drain and rinse with cold water to stop the cooking process.

Ingrediednts for the Sauce for Beef Chow Mein

To make the sauce, you will need:
  • 1/4 cup beef broth or water
  • 1 Tbsp. oyster sauce
  • 1 Tbsp. soy sauce
  • kosher salt and freshly-ground black pepper, to taste
  • 1 Tbsp. cornstarch mixed with 4 Tbsp. water

Instructions for Making the Sauce for Beef Chow Mein

Place all of the sauce ingredients in a medium bowl, and whisk them together until the sauce is smooth. Now set it aside.

Additional Ingredients for Beef Chow Mein

For the rest of the chow mein, you will need:
  • vegetable oil for stir-frying
  • 1/2 red onion, diced
  • 1 red bell pepper, diced
  • 8 oz. mushrooms, sliced
  • 1 lb. bok choy, cut into bite-sized pieces
  • 1 green onion, diced

Additional Instructions for Making Beef Chow Mein

Heat the oil in a wok over medium-high heat, and add the noodles. Stir fry a few minutes, then remove to a bowl.Wipe the wok clean, and add a few more tablespoons of oil. Add the beef and red onions, and stir fry until the beef is cooked through. Remove to a plate. Add a little more oil to the wok, and add the red peppers. Stir fry for 1-2 minutes. Add the mushrooms, and stir fry another minute or so.

Now add the bok choy, and add about 1/4 cup of water to the wok. Cover, and let the bok choy steam for a few minutes. Uncover, and add the meat back to the wok. Stir to mix the flavors. Okay, add the noodles back to the wok, and stir the sauce, then add to the wok. Stir fry to coat the vegetables and noodles well with the sauce.Serve the beef chow mein topped with the chopped green onions.
