Transcript:How to Make Basic Fried RiceHi, I'm Stephanie Gallagher for About.com, and today, we're making a basic fried rice from our Chinese Food site.
Ingredients for Making Basic Fried RiceFor this recipe, you will need:
- 2 large eggs
- 1 tsp. salt and black pepper, to taste
- 4 Tbsp. oil for stir-frying (or more or less as needed)
- 4 cups cold cooked rice, preferably a jasmine scented rice
- 1-2 Tbsp. soy sauce or oyster sauce (or more or less, to taste)
- 1-2 green onions, chopped
Instructions for Making Basic Fried RiceCrack the eggs into a bowl. Add the salt and pepper, and whisk together.Now heat a wok or large skillet over medium high heat. Add 2 Tbsp. of the oil, and add the eggs. Cook and stir until they're scrambled, but not too dry. You don't want the eggs to be overdone. Remove the egg from the wok, and wipe the wok clean.
Now add the remaining 2 Tbsp. of oil to the wok, and add the rice. Stir-fry a few minute to heat the rice and break it up. Now add the soy sauce or oyster sauce, and stir that in. And add the egg and the green onions. Stir-fry until everything is well combined. Serve the fried rice immediately.
