I am Cheryal Loosmore for About.com. Today I will be showing you how to cook the egg for fried rice.

Cook the Egg Separately

When preparing the egg for the fried rice, always cook the egg separately from the other ingredients. Then reincorporate the egg and other ingredients before eating. If you add the raw scrambled egg to the rice and other ingredients in the saute pan, it will alter the texture. The egg will coat the ingredients resulting in a mushy dish.

Scramble the Egg for Fried Rice

Start by scrambling eggs. One way to cook the egg is to scramble it in an oiled pan or wok. Once cooked, remove from the pan then saute chopped green onion, cold cooked rice, frozen or fresh chopped peas and carrots and soy sauce to taste. Once these ingredients have heated through and the soy sauce has been incorporated, remove from heat and stir in the cooked egg.

Fried Eggs Also Work for the Recipe

Another popular way to prepare the egg is to heat a generous amount of oil in a saute pan or wok. Let the egg cook as one solid piece similar to a fried egg. Remove from the pan and drain on paper towels to remove excess oil. Cut into pieces and add to the sauteed vegetables and rice mixture.Thanks for watching.
