Hi, I'm Rachel Edelman for About.com Food. Today I'm going to show you how to make avocado egg rolls.Avocado Egg Roll Ingredients
For this recipe, you'll need:- 12 egg roll wrappers
- 1 1/2 avocados, halved and pitted
- 1/2 cup sliced red onion
- 24 fresh cilantro leaves
- 12 large basil leaves
- peanut oil for frying
- 1/4 cup hoisin sauce
- 2 teaspoons lime juice
- 1/3 teaspoon cayenne pepper
Heat the Oil
First preheat oil in pot medium heat. Pour a few inches and heat to about 350 degrees. It may take about 10 minutes.Fill the Egg Roll Wrapper
Next, lay an egg roll wrapper on its diagonal. Use a large spoon to remove the avocado from the skin. Then, slice them into four slices lengthwise.Now, we place everything into the wrapper. First, put a slice of avocado horizontally on each wrapper.
Then top with a few strips of red onion, two cilantro leaves, and one large basil leaf. Next, sprinkle with a pinch of cayenne pepper.
Wrap and Seal the Egg Rolls
Now, wet your fingertips with water and brush the edges of the wrapper to help seal the egg rolls.To wrap it, fold the bottom corner over the filling and then fold the two side corners over the center. And then, tightly roll everything towards the remaining corner. Press it down to seal.
Fry the Egg Rolls
See if the oil is ready by sticking a corner of an egg roll into the oil. It should bubble but not burn.Place a few rolls into the oil for 1-2 minutes until they are crispy and golden. You may need to rotate them to cook both sides.
When they are done, drain them on paper towels. Be sure to allow time to reheat the oil in between batches of egg rolls.
Make the Egg Roll Dipping Sauce
Meanwhile, prepare the dipping sauce. In a small bowl, pour the hoisin sauce, lime juice, and pepper. Mix it together.Place the egg rolls on a platter to serve. For a fancy presentation, pour into the extra avocado half and top with a cilantro leaf. Enjoy.
