Transcript:How to Make a Quick Stir-Fry for Kids
Hi I'm Katherine Lee from About.com and this is Danielle from Cooked in Brooklyn. And today we're going to show you how to make stir-fry for kids.
Ingredients for a Quick Stir-Fry for Kids
I'm making a chicken broccoli stir fry today and it's super easy. It's pretty fast. And it's really healthy. So I started with 2 pounds of boneless, skinless chicken thighs. So I have about a cup of soy sauce. And I'm just going to dump that in. I have about 4 cloves of garlic. Just roughly minced.
And then I diced up an entire scallion, but I just kept the scallion whites for the marinade and the greens are going to be for the garnish. And then I have some ginger that I grated. 3 tablespoons of cornstarch. This is sesame oil, about 2 tablespoons. And then I have 2 tablespoons of fish sauce. And then just a little splash of some chili oil. For a little bit extra flavor. And then we're going to hit this marinade with a quarter cup of sugar.
And you know how I always eyeball things. It drives you crazy. Yes I do. I can't do it! I have to measure! It's ok!
Mix Stir-Fry Ingredients and Add to Skillet
And then I'm just going to take some tongs and stir this up. And after I stir it all up and mix it all in. We'll just let this sit for about 10 minutes while we start the broccoli. In a super hot pan we're going to put about a tablespoon of vegetable oil, and then I'm just going to add the broccoli. I'm just going to saute this at a super high heat for about 2 minutes. Alright so I'm just going to add about a quarter cup of water and just steam the broccoli a little bit. And we'll just cook this for another minute. Alright so then we just take the same pan get it nice and hot again, and put your chicken in.
I was just going to ask you, is it okay if I put it all in?
Serve Stir-Fry with Rice or Noodles
Yes, because I love the marinade in there. Its been about 5 minutes and I'm just going to turn the chicken that's brown over a little bit. And we'll get the other side. Alright so I'm just going to dump the cooked broccoli into the pan, and stir this up. And then we're just going to add a touch more water, and cook it for about 1 more minute. And we're just going to garnish with the green tops of the scallion that we saved. We're just going to use some sesame seeds. And I usually serve this with rice but some people like it on noodles. And there you have a quick healthy stir fry for kids.
