Chocolate Seizes After Contact with Water
Melting chocolate is an easy way to create a delicious fondue or fruit dip. But when the melted chocolate comes into contact with water, the dry particles become moist and begin to stick together, quickly forming a gritty, rough mess of chocolate.
Do Not Cover Warm Chocolate
Never cover warm chocolate with a lid, as the heat of the chocolate might form condensation on the inside of the bowl, which will cause the chocolate to seize. If this happens, simply add solid vegetable shortening to your mix -- one tablespoon per six ounces of chocolate. Mix in the shortening thoroughly so that it permeates your chocolate. You should see it start to smooth out quickly.
A Chocolate and Shortening Mixture is Suitable for Baking
Even after adding the shortening, your seized chocolate will not be suitable for dipping or presentation, but you can still use it for baking.
