Transcript:How to Make Lollipops

Hi, I'm Christine Alpert, owner of Sweettablescapes in Tenafly, NJ. I'm here for About.com to show you how to make lollipops. This recipe comes to us from the About.com Candy site. 

Lollipop Ingredients

For the ingredients, you'll need:

  • 1 cup sugar
  • 1/2 cup light corn syrup
  • 1/4 cup water
  • 1 1/2 teaspoons extract of your choice
  • food coloring
  • lollipop sticks

Mix Ingredients Over Heat

Today for this recipe, I'm using cookie sheets with a silicone mat instead of molds. We're combining the sugar, the corn syrup and the water into our saucepan over medium high heat, and you're going to stir until the sugar dissolves. You really can stir as long as the sugar has not completely melted.

After that, once the liquid starts boiling, you don't want to stir anymore because you create crystals that can fall back into the mixture and make it very lumpy. So, you use a brush with a little bit of water, and you get rid of them.  

Add Coloring and Extract for Flavor

Now that the liquid is boiling, I'm inserting the candy thermometer. I am not stirring anymore. I don't want to create any movement and crystallization, and I'm going to watch the thermometer until we reach 295 degrees. 

We're at 295 now, so I'm turning off the heat, removing the thermometer, and we're going to wait until the bubbling stops completely to add our orange extract and our food coloring. I'm pouring in the orange extract and mixing, and a little bit of orange coloring.

Pour Our Lollipops and Let Them Set

We're pouring on top of the sticks, and as you can see, it's very thick. So, you can really control the shape. You can also use molds of course, just don't buy the plastic ones because the caramel is so very hot that it will melt them. So, you need to find silicone or metal. 

So, we've let the lollipops set for about fifteen to twenty minutes. As you can see, they come off very easily from this silicone mat. And there you have it, the lollipops for the kids.
