Hi, I'm Stephanie Gallagher for About.com, and today, we're making no-bake chocolate peanut butter cookies from our Busy Cooks site.
Ingredients for No Bake Peanut Butter Chocolate Cookies
For this recipe, you will need:
- 2 cups sugar
- 1/2 cup milk
- 1/2 cup unsweetened cocoa
- pinch of salt
- 1/2 cup butter
- 1 cup peanut butter
- 1 tsp. vanilla
- 3 cups quick-cooking oatmeal (not old-fashioned or instant)
Instructions for Making No Bake Peanut Butter Chocolate Cookies
Place the sugar, milk, cocoa powder, salt and butter in a large saucepan and melt, stirring until the ingredients are well-combined. Now bring the mixture to a boil, and cover the saucepan for 30 seconds to allow the steam to wash the sugar crystals down the sides of the pan. Now stir the mixture and bring it to a rolling boil for 1 minute.
Additional Instructions for Making No Bake Peanut Butter Chocolate Cookies
Turn off the heat, and stir in the peanut butter and vanilla until smooth. Add the oatmeal, and mix that in.Let the mixture stand for 10 minutes, stirring occasionally to allow the oatmeal to absorb more of the liquid. Now drop the mixture by spoonfuls onto waxed paper-lined cookie sheets. Let the cookies cool a bit until you can touch them, and shape them into balls. When the cookies are completely cool, you can enjoy them.
