Jambalaya Recipe

Using one pot to cook all the ingredients, this shrimp and sausage jambalaya is an efficient way to combine your favorite flavors in one meal.

Hi, I'm Rachel Edelman for About.com Food. Today I'm going to teach you how to make jambalaya with shrimp and sausage.

Jambalaya Ingredients

For this recipe you will need:
  • 1 cup cooked sausage
  • 1 cup cooked shrimp
  • 2 tbsp vegetable oil
  • 1/2 tsp minced garlic
  • 1 tbsp double-strength tomato paste
  • 1/2 tsp salt
  • 1/4 tsp dried leaf thyme
  • 1/8 tsp ground cayenne pepper
  • pinch saffron (optional)
  • 1 green onion
  • 1/2 cup chopped green and red bell pepper
  • 14.5 oz can diced tomatoes
  • 3/4 cup uncooked long grain rice

Chop Jambalaya Vegetables

First prepare the vegetables. Cut off a large slice of both peppers. Dice the peppers so that they are in small, even pieces. Next cut a green onion into small slices. Have the vegetables ready to go on a plate.

Cut and Cook Sausage

Next prepare the sausage. Cut each piece in half, and then cut it in half again. Slice them so they are small, triangle pieces. Over medium heat, pour the oil into a large, deep skillet. Add the sausage and sauté it.

Stir in Vegetables

Once it browns, add the garlic, onion, and peppers. Cook until the vegetables are tender. Now add the can of diced tomatoes and the tomato paste. Pour 2 cups of water into the skillet. The rice I'm using requires 2 cups of water per cup of rice. Check the instructions for your rice. Finally, add the seasonings.

Simmer Jambalaya Ingredients

Stir all of the ingredients so they are well combined, then bring everything to a boil. Cover the skillet and reduce to low. Simmer for about 25 minutes stirring occasionally. Add the shrimp, and cook until the shrimp is hot. Serve it in a bowl and enjoy.
