Transcript:How to Make a Pesto Chicken Sandwich
Hi, I'm Stephanie Gallagher for About.com, and today, we're making chicken pesto sandwiches from our Busy Cooks site.
Ingredients for a Pesto Chicken Sandwich
For this recipe, you will need:
- 8 oz. cream cheese, softened to room temperature
- 1/4 cup plain yogurt
- 1/3 cup prepared pesto
- 1/4 cup grated Parmesan cheese
- 2 cups chopped cooked chicken
- 1 red bell pepper, diced
- 10 slices whole wheat bread
- 3 Tbsp. butter, softened
Instructions for Making a Pesto Chicken Sandwich
Place the cream cheese, yogurt and pesto in a medium bowl, and beat with an electric mixer until smooth. You may need to stop the mixer to scrape down the sides. Now add the Parmesan cheese, chicken and red bell peppers and stir until everything is well-incorporated.
Making the Pesto Chicken Sandwich
To make the sandwiches, spread one side of each braes slice with the softened butter. This not only adds flavor, but if you want to freeze the sandwiches, it provides a barrier so the bread doesn't get soggy. Now spread the chicken pesto mixture over the butter, and top with another slice of bread, buttered side down. Cut the sandwiches in half. And if you want to freeze them, wrap each one individually in plastic wrap. Then place in a plastic, zipper-sealed freezer bag. Thaw in the refrigerator, and enjoy.
