Hi, I'm Stephanie Gallagher for About.com, and today, we're making no-bake chocolate peanut butter bars from our Busy Cooks site.
Ingredients for No Bake Chocolate Peanut Butter Bars
For this recipe, you will need:
- 2 cups finely-crushed peanut butter sandwich cookies
- 1/2 cup butter, melted
Filling for No Bake Chocolate Peanut Butter Bars
For the filling, you will need:
- 2 cups powdered sugar
- 1-1/3 cups peanut butter
- 1/2 cup butter, melted
Topping for No Bake Chocolate Peanut Butter Bars
And for the topping, you will need:
- 2 cups semisweet chocolate chips
- 1/2 cup milk chocolate chips
- 1/2 cup peanut butter
Instructions for Making No Bake Chocolate Peanut Butter Bars
Line a 9 x 13 pan with foil, and set it aside. Mix the crushed cookies and 1/2 cup of the melted butter until the cookie crumbs are well coated. Pour the mixture into the prepared pan, spread it out so that it evenly covers the bottom of the pan. And use your fork to pat it down to form a crust.
Additional Instructions for No Bake Chocolate Peanut Butter Bars
Now for the filling, combine the powdered sugar, the 1-1/3 cups of peanut butter and the other 1/2 cup of melted butter in a large mixing bowl, and stir until smooth. Dollop the mixture over the crust, and smooth it over with a spatula. Chill the bars for 30 minutes.
To make the topping, place the semisweet chocolate chips, milk chocolate chips and remaining 1/2 cup of peanut butter in a microwave-safe container. Microwave on full power for 1 minute.Stir, and continue microwaving in 1-minute intervals, stirring after each, until the chips are completely melted and the mixture is smooth.Pour over the chilled peanut butter filling. Smooth the topping over with a spatula. Cover with foil, and refrigerate until firm. Lift the bars out of the pan, and cut into small squares. Store the chocolate peanut butter bars at room temperature.
