Hi, I'm Rachel Edelman for About.com Food. Today I'm going to show you how to make beef empanadas.Beef Empanada Ingredients
For this recipe you will need:- 2 lbs ground beef
- 2 small potatoes, boiled and diced
- 1 chopped onion
- 2 1/2 teaspoons of minced garlic
- 1/4 cup green olives
- 1 hardboiled egg
- 1 cup beef broth
- 1/2 cup raisins, soaked in warm water
- 1 package of dough
Prepare the Beef
On high heat, grease a large skillet. Add the garlic and onions, and sauté for 1 minute. Now add the ground beef. While the beef is cooking, cut the olives into small pieces, discarding the pit. You can use a food chopper or a knife. When the beef is browned, drain the meat and return the skillet to the stove.
Stir in Ingredients
Next add the beef broth, the soaked raisins, and the chopped olives. Bring the mixture to a boil and then bring it down to a simmer.Let the liquid reduce until it's almost gone. Meanwhile, remove the shell from the hard boiled egg and roughly chop it. Fold in the eggs and potatoes, and now the beef filling is ready.
Prepare Beef Empanada Crust
Preheat the oven to 375 degrees. Next we prepare the crust. I'm using pizza dough, but you could also use pastry or homemade dough. Lightly flour a surface and a rolling pin. Take a handful of dough and roll it so its 1/4 inch thick. Place the filling in the center of the dough circle, and wet the edges so they will seal together. Fold the dough over the filling and push down on the edges.Bake the Beef Empanadas
Place the empanadas on a lined baking tray and cook for about 25 minutes. Remove the pan from the oven. You'll see the crust will be nice and hard. Cut the large empanadas in half and enjoy. Thanks for watching. To learn more, visit us on the Web at food.about.com.
