Transcript:Artichoke Dip

Hi, I'm Rachel Edelman for About.com Food. Today I'm going to show you how to make an artichoke dip that can be a great appetizer or snack.

Artichoke Dip Ingredients

For this recipe you will need:
  • 12 ounces artichoke hearts
  • 1 cup mayonnaise
  • 1 cup grated parmesan cheese
  • 1/4 cup minced roasted red pepper
  • 10 oz. pkg. frozen chopped spinach, thawed and well drained
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon onion powder, optional
  • 1/4 cup of water

Prepare and Chop the Artichoke Hearts

You can find artichokes in a jar or frozen. If they are frozen, bring 1/4 of a cup of water and the artichokes to a boil, and then simmer. When they are fully defrosted, drain them and chop them.

Chop Additional Vegetables

You can many different kinds of vegetables to an artichoke dip to make it more interesting. I'm going to add spinach. Defrost the spinach on the stovetop or in the microwave. Be sure to drain the spinach well. To add some extra color, I'm also going to add some roasted red pepper. Slice a roasted red pepper thinly and chop it. Measure until you have 1/4 cup.

Combine and Bake Artichoke Dip Ingredients

Combine the artichokes, spinach, roasted red pepper, parmesan cheese, mayonnaise, garlic powder and onion powder. Spread the mixture into a shallow baking dish.

Bake at 350 degrees for 30 minutes. Serve warm with chips or crackers.
