Hi, I'm Mary and today for About.com, I'm going to teach you how to make a sweet potato cottage pie.
Ingredients for Sweet Potato Cottage Pie
For this recipe you will need:
- 900g sweet potatoes
- 800g ground beef
- 600ml beef stock
- 115g grated cheese
- 115g mushrooms
- tablespoon freshly chopped herbs
- 1 Onion
- 2 Carrots
- 1 Garlic Clove
Instructions for Making Sweet Potato Cottage Pie
Pre-heat the oven to 375°F/190°C/Gas 5. Now prepare your ingredients. Chop the onions, carrots and garlic into small slices. You can crush the garlic if you prefer. Oil a frying pan and place it on a high heat. Add the onions, carrots and garlic and cook gently, until soft.

Next, add the minced beef, again making sure to mix thoroughly. Cook until the beef has turned brown and then add the beef stock. You can use either premade or cubed, depending on personal preference. To add balance to this receipe, chop some mushrooms and parsley and add them to the pan. Stir again and season if desired. Now, place the lid on the frying pan and allow to simmer for 10 minutes.While the beef is cooking, prepare the sweet potato by cutting into small slices and placing in a saucepan. Cook for around 10 minutes until soft.
Combining the Ingredients for Sweet Potato Cottage Pie
Remove the lid from the frying pan and simmer for a further 15 minutes. Drain the potatoes and melt the butter in the saucepan, before re-adding the potatoes. Add the milk and then mash the potatoes thoroughly until smooth. Once the beef is ready, scoop it into a dish and lay the potato mixture on top, making sure it's evenly spread across the meat. To finish off, sprinkle the grated cheese on top of the potato mixture and then place in the oven for 30-35 minutes. Now it's ready to serve! Enjoy it exactly how it is or add some extra vegetables such as peas or brocolli to compliment the meal.
