Transcript:How to Make Sticky Toffee Pudding

Hi, I'm Elaine Lemm for the British and Irish food site and today I'm going to show you how to make one of Britain's most loved desserts, a StickyToffee Pudding.

Ingredients for Sticky Toffee Pudding

  • 8 oz/225g cooking dates, stoned and chopped small
  • 6 fl oz/175ml boiling water
  • 1 tsp vanilla extract
  • 6 oz/ 175g self-raising
  • 1 tsp bicarbonate of soda
  • 2 large, fresh eggs, lightly beaten
  • 3 oz/85g butter, softened, plus extra for greasing
  • 5 oz/140g demerara sugar
  • 2 tbsp black treacle
  • 3 ½ fl oz/100ml milk
  • 6 oz /175g light muscovado sugar
  • 2 oz/55g butter, cut into pieces
  • 8 oz/ 225ml heavy/double cream
  • 1 tbsp black treacle

Instructions for Making Sticky Toffee Pudding

To begin our Sticky Toffee Pudding put the softened butter into a large mixing bowl, add the soft brown sugar. Once these are creamed together add the egg a little bit at a time and once the egg's all incorporated then we add the 2 tablespoons of black treacle. Once that's all mixed tougher, then I've got the flour which has been sifted together with the bicarbonate of soda and I'm going to put about a third of this into the batter, and about a third of the milk. Now this time I'm going to use a metal spoon and I'm going to fold the flour into this mixture, I want to keep as much air as possible into the batter. Keep adding the flour and the milk until both are used up. I've soaked the dates in a little boiling water for about 20 minutes, these need to be added to the cake mixture, and the vanilla extract.

Baking the Cake for the Sticky Toffee Pudding

And then we need a baking tin which has been lightly greased with butter. This now needs to go into the oven at 160 degrees Celsius for about 40 to 50 minutes until it's lovely and risen and golden brown.

Making the Sauce for Sticky Toffee Pudding

So while our cake is cooking we're going to make the sauce. Into a saucepan we need to put the butter, the sugar and half of the cream. Once all the sugar's dissolved let this bubble on three stove for about 2 minutes. After about 2 minutes we need to take it away from the heat and let it rest for about a minute and then we're going to add the remaining cream. Just stir that in, and now we're read for the cake. And here it is. The cake has had 40 to 45 minutes in the oven and as you can see it's lovely and risen. All it needs now is some of this lovely toffee sauce, and if you must, you can always add a dollop of vanilla ice-cream.
