Transcript:How to Make Spotted Dick Pudding
Hi, I'm Elaine Lemm for the British and Irish food site and today I am going to show you how to make classic, British steamed pudding called Spotted Dick.
Now I know the name does raise a few eyebrows but let me assure you it's quite straightforward, it's suet pastry with a lovely filling of mixed dried fruits, lemon and sugar.
Ingredients for Making Spotted Dick Pudding
- 115g / 4oz raisins
- 55g / 2oz currants
- 75g /3oz dark brown sugar
- Grated zest of 1 unwaxed lemon
- 225g / 8oz self-raising flour plus extra for dusting
- 115g /4oz shredded suet
- Pinch of salt
- 55ml /2 fl oz milk
Instructions for Making Spotted Dick Pudding
To start the Spotted Dick pudding I've mixed together the currants, the raisins, the brown sugar and the lemon zest. Into a large mixing bowl I've going to sieve the self-raising flour. Into there goes the suet and a good pinch of salt and using my fingertips I'm going to rub the flour into the suet.
Once all that's mixed together, just add a little of the milk and using a knife we're just going to mix this together, then you'll need to use your fingertips to bring the dough together into a ball.

And now we need to roll it out. Some flour onto a surface, then we're going to roll this into a rectangle, trim up the edges, and then we need to put the filling on. Then dampen these edges with a little cold water and then roll this into a large sausage and seal the edges. Then here I have a dampened dinner napkin, pop the Spotted Dick onto there and then roll this up, twist the ends together so it is a really nice, tight sausage and then we'll tie that with a little string.
There. This needs to go on the top of a steamer over boiling water and it is going to take about 2 hours until it's ready.
So our Spotted Dick has had a good 2 hours steaming in the pan, so I need to check whether it's cooked, and it's lovely and firm which means it's ready. Be very careful with this it is also very hot. Lovely. A finished Spotted Dick.
