Transcript:How to Make Lemon Posset
Hi, I am Anthony for About.com and today I am going to show you How to Make Lemon Posset. This has to be one of the easiest summer pudding to make and it still tastes absolutely delicious.
Ingredients for Lemon Posset
For this recipe you will need:
- 750ml Double Cream
- 200g Caster Sugar
- 3-4 Lemons juiced
- Zest of the lemons
Making the Cream Mixture
First pour the cream; lemon zest and sugar into a heavy based saucepan and gently heat whilst stirring continually until it all the sugar dissolves. Bring the cream mixture to a gentle boil and then simmer for 2 minutes.
Take the mixture off the heat and allow to infuse with the lemon zest for approximately 30 minutes.
Then strain the cream through a fine sieve and place back on the heat and simmer for about 8 minutes or until the cream thickens slightly.
Then take the cream off the heat and allow it to cool slightly and stir in the lemon juice and combine all the ingredients well.
Serving Lemon Posset
Then pour into individual glasses and place in the fridge to set for approximately 2-3 hours.
Serve garnished with some fresh berries and whipped cream.
