Transcript:How to Make Apple and Cheese Pie

Hi, I'm Anthony for About.com and today I am going to show you How to Make Apple and Cheese Pie.

Ingredients for an Apple and Cheese Pie

For the Pastry, you will need:

  • 180g Plain Flour
  • 110g Chilled Butter cubed
  • 4 Tbsp Ice water
  • Pinch of Salt
  • Milk to glaze

For the Filling, you will need:

  • 7 Cooking Apples peeled, cored, sliced.
  • ½ Tsp Cinnamon Ground
  • ½ Tsp Nutmeg Ground
  • 6 Tbsp Real Maple Syrup
  • 80g Sultanas
  • 150g Creamy Cheddar Cheese
  • 1 Tbs Butter
  • Pinch Sea Salt

How to Make the Pie Pastry

Place the flour and salt into a clean bowl and add the butter and work the flour through the butter with the tips of your fingers. It should resemble breadcrumbs once you are finished.

Add the water a tablespoon at a time and mix with a cold knife until the mixture is all combine. Add additional water if the mixture is to dry.

Roll the dough into two discs, wrap in cling film and place into the fridge for 30 minutes.

Make sure you pre-heat your oven to 425oF or 220oC

How to Prepare the Apple and Cheese Pie Filling

Next place the apples, sultanas, maple syrup, cinnamon and nutmeg in to a pan and cook over medium heat until the apples are soft.

Then, remove from the heat and stir in the butter and crumbled cheese and allow the filling mixture to cool.

How to Assemble the Pie

Grease the pie dish with butter, then roll out half the dough and line the pie dish with the pasty. Then, place the cooled apple mixture into the base of the pie dish.

Roll out the remainder of the pastry to cover the pie and dampen the edges with a little ice water to ensure they stick together.

Cover the pie and press the edges together firmly to seal in the filling. Score the top of the pastry to let the stem come out during cooking.

How to Bake and Serve the Pie

Brush the top of the pie with milk; this will give the pie a beautiful golden color once cooked. Place the pie in the oven and bake for approximately 20-25 minutes or until golden brown.

The pie is best served warm, and because there is cheese in this pie, there is no need for any cream or custard.
