Transcript:Chicken Tikka Masala Recipe

Hi! I'm Elaine Lemm for About.com Food, and today I'm going to show you how to make a chicken tikka masala curry. Although it originated in India it is actually one of Britain's favorite foods. It is now considered one of the national dishes alongside roast beef and Yorkshire puddings and fish and chips. It's quite easy to make and I'm going to show you how. And to begin we need to make a marinade.

Chicken Tikka Masala Marinade Ingredients

For the marinade, into the food processor put:
  • 1/2 cup of coriander/cilantro leaves
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 2 tbsp garam masala spice mix
  • 1 tsp red chili paste
  • 2 tbsp fresh lime juice
  • 1 tsp ground turmeric
Whizz in the food processor then put the mixture into a mixing bowl. Add 1/2 cup natural yogurt, and give that a good stir.

Marinate the Chicken

Add 1lb/450g chicken breast cut into 2” cubes and stir again. Make sure all the chicken is coated in the marinade. Cover and refrigerate for a minimum of 2 hours up to 24 hours.

Cook the Chicken

Thread the chunks of chicken onto wooden skewers, cook under the grill until they are completely golden brown, about 15 minutes, turning frequently.

Chicken Tikka Masala Sauce

For the sauce, we need:
  • 1 red onion finely chopped
  • 4 cardamom pods
  • 1 tsp garlic paste
Stir, then add:
  • 1 tbsp garam masala
  • 1 tbsp brown sugar
  • 2 tbsp ground almonds
  • 1 can/400g chopped tomatoes

Cook the Chicken Tikka Masala

Stir and cook until sauce is thickened approx 10 minutes. Add the spiced, cooked chicken and 1 cup light/single cream. Mix this all together and cook for about another 10 minutes on a gentle simmer.

Serve the Chicken Tikka Masala
