Transcript:How to Make Beer Can Chicken

Hi, I'm Gretchen Siegchrist for About.com Food, and I am going to show you how to make beer can chicken. This is a fun way to cook, and it turns out fantastic.

Beer Can Chicken Recipe Ingredients

For this recipe, you will need:
  • 1 whole chicken, about four to five pounds
  • 1 can of beer (any flavor will do, but avoid draught-style cans)
  • spices for flavoring the chicken
You will also need a roasting pan, a meat thermometer, and a can opener.

Wash the Chicken

Begin by placing a cooking rack on the lowest shelf of the oven. Now, you will preheat it to 350 degrees. Let us prepare the chicken while the over gets warm. Begin by washing the chicken inside and out. Then, dry it with paper towel.

Season the Chicken

You can season your chicken with whatever kind of spices you want. I am using a simple mixture made of one teaspoon each of salt, cumin, chili powder, paprika, and cinnamon. Mix the spices together and rub them all over the outside and the inside of the chicken. Save any spices that you have left over. We will be using them in a second.

Prepare the Beer Can

Now that the chicken is prepared, let us get the beer ready. Open the can and get rid of the top inch or so of beer. You can dump it out, but it might be more fun to drink. Using the bottle opener or some other tool, make about five or six more holes in the top of the beer can. Now you can take any leftover spices you have and just dump those right into the beer can. This will help flavor the chicken even more as it cooks.

Put the Beer Can Inside the Chicken

Now we are ready to assemble everything for cooking. Place the chicken on top of the beer can, so that the can goes right up inside the cavity. The chicken should be standing in the roasting pan, and the beer can and the two legs will form a tripod that will keep it up.

Cook the Beer Can Chicken

Now, carefully put the whole thing in the oven and let it cook. It should take about two hours for a five-pound chicken, and you can adjust accordingly. Your meat thermometer should read between one hundred seventy and one hundred eighty degrees when the chicken is done cooking.
