Hi, I'm Stephanie Gallagher for About.com, and today, I'll show you how to slice brisket properly so it is melt-in-your-mouth tender.

Brisket is a tough cut of meat that can become quite tender when it is cooked properly and sliced properly. The key is to slice it against the grain.If you look closely at the brisket, you will see lines running in one direction. That is called the grain. You want to slice directly perpendicular to those lines, like this.

Thin slices are best - they will give you the most melt-in-your-mouth taste. If you were slicing with the grain, this is what it would look like. See how the slices appear more shredded? This will not taste as tender. When you slice a brisket properly, this is what your slices will look like.
