Transcript:Pulled Pork Recipe

Hello, I'm Michele Manfredi for About.com Food. Today, I'm going to show you how to make pulled pork, one of the easiest and most delicious pork recipes of all time.

Pulled Pork Ingredients

Here's how we get started. We're going to need something called a dry rub. Basically, just a mixture of salt, sugar and spices. Here's what I used:
  • 2 tablespoons of kosher salt
  • 1 tablespoon of white sugar
  • 1tablespoon of brown sugar
  • 1 teaspoon of black pepper
  • 1 teaspoon of chipotle chili powder
  • 1tablespoon of paprika, and
  • 2 teaspoons of garlic salt
Give it a stir and mix it up well. And here's the star of the show: a pork shoulder roast. Sometimes pork shoulder is also called pork butt and it's going to have a little bit of shoulder blade bone here, but mostly it's boneless, this one's about 5 1/2 lbs. I like to use 1 Tablespoon of dry rub per 2 lbs. of meat. So I have about 3 Tablespoons of dry rub that I'm sprinkling on.

Coat the Pork Shoulder

All right, so we're going to completely coat the pork shoulder with our dry rub. This is a big piece of meat, so that may seem like a lot, but really it's actually not. We're actually going to use a little bit of our dry rub at the end to season, so set aside your extra.

Add Onions and Pork to Dutch Oven

Ok the best thing to cook this in is a big, deep Dutch oven with a lid. This allows for nice slow even roasting. Before I put my pork in, I like to put a chopped onion in the bottom, this will add a little bit of moisture and flavor as your pork roasts.

Roast the Pork Shoulder

We're going to put that in a very slow oven, 225 for about 6 hours. Generally, it's about an hour, to an hour and 15 minutes per lb. of pork. After 6 hours, I'm going to turn off the oven and let the pork rest for another hour. By then it should be perfectly tender and you should be able to pull that shoulder blade bone right out. You can see how the meat will just tear away.

Tear Pork Into Bite-Sized Pieces

Alright, to serve, simply take a big hunk of that succulent pork and use two forks to pull it apart, that's why it's called pulled pork. Now some people also like to chop it with a cleaver into small pieces. But I actually prefer the old-fashioned method of just pulling it; I like the larger irregular pieces.

Make the Pulled Pork Sandwich

To finish, pile it on a soft roll. At this point you'll want to taste your pork and then use some of the dry rub to season, and if you want, drizzle it with your favorite BBQ sauce. This may be America's greatest hot sandwich. I really hope you give this a try, enjoy.
