Transcript:Portabella MushroomsHi, I'm Rachel Edelman for About.com Food. Today I'm going to show you how to prepare portabella mushrooms.
Storing and Washing Portabella MushroomsPortabella mushrooms are commonly found at the grocery store as caps or as slices. When you get home, take the mushrooms out of the plastic, and keep them in the fridge wrapped in paper towels. When are ready to cook them, quickly rinse or wipe off portabellas with a squeezed damp towel.
Cooking Sliced Portabella MushroomsYou can slice the portabella mushroom caps yourself, cutting them into 1 inch pieces. In a skillet, cook sliced portabellas in a little oil or butter over medium-high heat. Stir and cook until they are tender. This may take about 5 to 6 minutes. Season them with your favorite herbs or spices. Sliced, portabella mushrooms are a low-fat vegetable that can add great flavor to a sauté with onions, peppers and garlic, served with rice and other kinds other dishes.
Grilling Portabella Mushroom BurgersAs whole caps, portabellas can be used as a main dish. They are great grilled and can be a great substitute for a beef hamburger.
First preheat the grill. Brush the mushrooms with oil and season them with salt, pepper, and your favorite seasoning. Grill mushrooms over a medium heat 3 to 5 minutes on each side, brushing again with oil once or twice. The mushrooms become firmer, the longer they are cooked.
You can toast your bun on the grill along with the mushrooms. Serve with your favorite hamburger fixings.
