Hi, I am David Klose the Owner of BBQ PITS by Klose for last 30 years. In this video, we are going to be showing how to use a water smoker.Components of a Water Smoker
Now I will be showing you how to use the components of a water smoker. We will take the top off, pull out the mid-section here; that exposes your charcoal area. In the side, on the bottom part you have a fire grid and then you have a charcoal ring.Tips for Charcoal Use in a Water Smoker
So what you want to do is get your regular briquettes, the hardwood charcoal and put in there. For quick meats and things like that you don't really need to fill it that full. The only time that you will fill it completely full is that if you are doing large section meats like brisket and pork butts. Then you would put a lot of coal down and put the lit coal on the top before you insert the other part and then it will go on lighting without you.Tips for Lighting a Water Smoker
Now that you have your charcoal in your water smoker, there are a couple of different ways of lighting it. You can use the cakes, the gels, the lighter fluids, but once again, just like the regular grills and smokers. Once you light the fire with those, be sure let it burn for 10-15 minutes before you start closing it, that gives off all the bad vapors and gives you nice clean burn.So here we have a little different method. I have actually got a flame torch that is going to light it a lot quicker, and because we just use these, kind of, they are just so fast in building in a fire.
Tips for Adding Water to a Water Smoker
Now as you got your charcoal lit, you want to put back your main section with your water pan, so what we are going to do is just take a bowl of water and pour into the pan to fill it up. This is going to keep it cool while over the charcoal that allows you to cook in the main body of the pit without burning the meat.Tips for Cooking Meat Using a Water Smoker
So this done on the lower rack what you are going to do, these fast foods, because they are going to cook a lot hotter, like chicken, if you want to cook your ribs really quick, then you have got your regular meat rack for your ribs, shell food, pork butts, briskets and all of that.Then you grab your top where you can see it from the window inside. Make sure all your air shields are open; you get a nice clean even burn, wire blue smoke. You are ready to cook; now you are ready to go in-house.
Tips for Cleaning a Water Smoker
A final tip for you: A charcoal grill and a smoker, when you have taken the meat off, just kill these vents on the sides and the bottom and just let it go out for a couple of days, then as you go back in and brush your meat racks and empty your charcoal pan and it's ready for your next cook, it's just as simple as that folks.This is David Klose the Owner of BBQ PITS by Klose in Huston, Texas.
