Transcript:How to Make Spicy Spare Ribs
Hi, my name is Kenneth Nickle, I've been cooking Barbecue in Kansas City for a little over ten years. I trained at BB's Lawnside, competed with the Nickle boys BBQ team in competitions all over Missouri, and right now I work at Fiorella's Jack Stack. Today I'm going to show you how to make a spicy rib rub, for About.com.
Ingredients for Spicy Spare Ribs
To make a spicey rib rub, you'll start off with a basic rib rub, which is:

Tips for Changing the Spicy Spare Rib Recipe
To kick it up a notch, for a spicier rib rub, you can use cayenne pepper, or chili pepper or even red pepper flake. Any kind of spicy dry spice, is fine, just add it into the basic rib rub.As far as how much to add to your rib rub, just start off with a couple of tablespoons of like a cayenne pepper and then just taste it and then just add a little more, it depends on how spicy you want that rib rub.
Applying the Rub to the Ribs
When you get your rib rub all mixed together I personally like to use my hands get sprinkle it on the meat. You can use a shaker if you like. Just pat it in, you don't want to rub it into the meat because that will cause an inconsistency in the rub so just pat it in, that's your best bet. You can put the rub on and then wrap it up in seran wrap for a few hours this is kind of like a marinade. Once you have your smoker set to about 250 degrees you can go for the first two hours without checking on your ribs, but I would recommend checking them about every thirty minutes and spray them down with apple juice. They're going to cook to about 185 degrees.
Cooking Spicy Spare Ribs
If you want to put BBQ sauce on your ribs wait until the last 10-15 minutes of the cook time. If they are done, you can still put the BBQ sauce on there and let them cook for another 10 to 15 minutes and you will be fine.
As far as spicing up your BBQ sauce, you've already done the dry rib rub spice in there soyou can get into liquid spices. Jalepeno Juice, Tabasco Sauce, anything spicy that you might like just go ahead and add that into your BBQ sauce before you put it on your ribs.These are just a few tips on how I make a spicy rib rub.
