Transcript:How to Grill the Perfect Filet Mignon
Hi, I am Anthony for About.com and today I am going to show you how to grill the perfect filet mignon. I will take you through certain methods that will ensure that when you grill a filet mignon it will be tender and juicy.
Ingredients and Supplies to Grill the Perfect Filet Mignon
First you will need:
- eye fillet steak
- sea salt
- cracked black pepper
- olive oil
- aluminum foil
- gas or wood-fire BBQ
Select Meat Carefully to Grill the Perfect Filet Mignon
Try and visit your local butcher when selecting the meat. It will ensure you get a good quality and a piece of meat. Look for a piece of eye filet that has been dry aged which will mean the meat should be much more tender. Each BBQ is different and will have different temperatures. You will want to heat you grill to maximum heat with the cover down to ensure your grill reaches almost smoking point. The eye filet has no fat, for this reason you need to wrap the meat in bacon, which will introduce some moisture. Place a strip of bacon on a chopping board and slowly roll the eye filet along the bacon. Then, secure the bacon with a toothpick.
Place the meat on a plate and sprinkle with sea salt and cracked pepper. It is important to only salt the meat moments before cooking. Never pre-salt the meat in advance it will result in dry and tough meat. Then drizzle oil over the steak and then you are ready to grill.
Grill the Perfect Filet Mignon
Lift the cover of the BBQ and lower the heat down to med/high and then place the steak on the grill. It is important to not play with the steak and let it cook on one side and seal in the flavors. Place down the BBQ cover and cook for approximately 8-10 minutes depending on doneness needed. Then flip the steak and cook on the other side for approximately 8 minutes with the BBQ cover down. You can check for doneness by pressing lightly on the steak with your index finger. If the steak is springy in texture it is more rare, and if the meat is firm it is well done. Never cut into a steak to check for doneness. You can get used to the firmness cooking a steak with practice.
Rest Before Serving the Perfect Filet Mignon
This is the most important part of the cooking process. It is very important to rest the meat after cooking. Take the steak off the grill and place on a clean plate and lightly cover with foil. Allow the steak to rest for approximately 5-10 minutes before serving. This will ensure that the steak is tender and juicy. After allowing the steak to rest now you are ready to serve the filet mignon with crisp greens and a sauce of your selection.
