Transcript:How to Grill Lamb Chops

Hi, I am Gina Miller with About.com, here today to talk to you about grilling lamb chops, one of my favorite things in the whole world. If you have been timid in the past about trying lamb chops or maybe you think you are not a fan, hopefully some of these tips will help you to encourage to try an amazing dish.

Choose Best Cut for Lamb Chop

I would first start with selecting the right lamb chop cut. The best cut for lamb chops should be the loin, rib or sirloin chop. Talk with your local meat market butchers and let them advise you on getting the best tasting cut; that will make a huge difference in making your first impression of grilled lamb chops and making the meal a success instead of a disaster! Also, the chops should be about 1 inch thick.

Season and Grill Lamb Chops

Next, the marinade is a huge component to making delicious lamb chops. Lamb chops are best when married with seasonings like fresh chopped garlic, rosemary, thyme, oregano, and dijon mustard. Begin with a thin coating of olive oil and then a light sprinkling of seasonings, but don't go overboard, lamb chops have a lot of flavor all alone. And last, grilling: lamb chops should be grilled on a covered grill over a medium-high heat, 400-500 degrees. And the chops should never be over cooked or cooked to well done. You will be very disappointed in the results. A lamb chop should be medium rare or medium, with an internal temperature of 140 degrees F.

Let Lamb Chops Rest

And the best tip I can give you, besides buying the right cut of lamb chops, is to let the chops rest after removing them from the grill. This is when the meat really comes into its own and develops an amazing flavor. Five minutes to rest is minimum time to wait before serving. So remember, pick the right cut of lamb chop, talk to your butcher for advice, season and marinade lightly with aromatic flavors, grill only until medium rare, and always let the meat rest for a few minutes before you serve it, and that is it! You will now be an official huge fan of grilled lamb chops.
