Transcript:Hot German Potato Salad Recipe

Hi I'm Gina miler with About.com food and today I am making Hot German Potato Salad.There are many variations of Hot German Potato salad and this is a version I have cooked for my family many times and they just love it.

Ingredients for Hot German Potato Salad

The Ingredients you need are:

•6 large potatoes (about 2 pounds)

•1 cup of green onions, chopped

•3 tablespoons dry parsley

•2/3 cup white wine vinegar

•1/3 cup water

•1/3 cup canola oil

•1 egg

•4 strips bacon, cooked and crumbled

•2 teaspoons sugar

•1 teaspoon salt

•1/4 teaspoon black pepper

Instructions for Making Hot German Potato Salad

Now let's prepare by first starting with thoroughly washing the potatoes, place in a pot filled with water and boil with the skins on until tender (about 25 minutes). After the potatoes are cooked, cut the potatoes in half and set aside to dry out, for about 1 hour Wwhen the potatoes are dry, peel and chop potatoes into 1/4-inch cubed pieces. Place the potato pieces in a large bowl and toss with the chopped green onions, parsley, salt and pepper and Set aside.

Vinegar Mixture for Hot German Potato Salad

Now lets make the vinegar mixture. in a sauce panadd the vinegar, 1/3 cup of water and the sugar, whisk and bring mixture to a boil, then set this aside.Next Beat 1 egg in a small bowl and combine it with the vinegar mixture whisking everything briskly. Now Place the cut potatoes in a skillet, over a low heat, pour the vinegar/egg mixture and the 1/3 cup of canola oil all over the potatoes and toss lightly. Cook until evenly heated. Serve warm Topped with crumbled bacon. This side dish is for 6-8 people and a great compliment to your grilled or BBQ cuisine. I also love to pair this dish with a cold buttery Chardonnay.
