Instructions for Making Hot German Potato Salad

Now let's prepare by first starting with thoroughly washing the potatoes, place in a pot filled with water and boil with the skins on until tender (about 25 minutes). After the potatoes are cooked, cut the potatoes in half and set aside to dry out, for about 1 hour Wwhen the potatoes are dry, peel and chop potatoes into 1/4-inch cubed pieces. Place the potato pieces in a large bowl and toss with the chopped green onions, parsley, salt and pepper and Set aside.

Now lets make the vinegar mixture. in a sauce panadd the vinegar, 1/3 cup of water and the sugar, whisk and bring mixture to a boil, then set this aside.Next Beat 1 egg in a small bowl and combine it with the vinegar mixture whisking everything briskly. Now Place the cut potatoes in a skillet, over a low heat, pour the vinegar/egg mixture and the 1/3 cup of canola oil all over the potatoes and toss lightly. Cook until evenly heated.
