Hi I am Gina Miller with About.com Food to share some tips of choosing the right cuts of pork when making Smoked Pulled Pork.

Pulled Pork Cut Facts

Unlike Beef brisket you have a few more choice to choose from when deciding what type of pork cut to use for your BBQ Smoked Pull Pork dishes. The truth is pulled pork is the best when made front he Shoulder section of the hog.

Pulled Pork Cut Information

The shoulder can be cooked in whole or cut into two great cuts, The Boston Butt and the Picnic Roast. Both of these pieces come from the shoulder of the hog is known as the most flavorful part of the hog and contains the right ratio of fat to lean pork for the best flavor and texture. Ask your butcher for these cut of Pork if you do not see them displayed in the meat section.

Tips for Choosing Pulled Pork Cuts

These types of cuts are often kept in the back coolers of the meat department at your local market. If you choose to go with the Picnic Cut you can usually choose whether you want the bone in or out. Many BBQ experts believe the bone in gives the Pulled Pork more flavor, however the bone will weigh more and have less meat to eat. I usually pick the picnic cut without the bone, so I have little or no waste.

More Tips for Choosing Pulled Pork Cuts

Also, much of the fat in both the The Picnic and the Boston Butt cut is a good thing, this type of pork needs to smoke for many hours and the fat will cook off and help as a seasoning and moisturizing agent to make the end result unbelievably succulent and delicious. And for cooking these type of pork cuts Smoking is the preferred method of cooking: the long, slow, low heat cooking process causes the collagen to breakdown into sugar that really infuses the pork from the inside out, making it sweet and super tender. So regardless if you choose to smoke the whole pork shoulder, or use cuts fthe Boston Butt or the Picnic cuts, any of these choices will work great for BBQ Pulled Pork.
