Transcript:Coconut and Chocolate Macaroons

Hi, I'm Rachel Edelman for About.com Food. Today I'm going to show you how to make your own macaroons.

Macaroon Ingredients

For this recipe you will need:
  • 3 eggs
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 3 cups shredded coconut
  • melted dark chocolate
Preheat the oven to 325 degrees.

Beat the Eggs

Crack each egg and place the whites into the bowl of an electric stand mixer. If you don't have a stand mixer, you can use a hand blender instead. Put on the whisk attachment and beat the egg whites until they are fluffy with bubbles and foam.

Mix in Plain Macaroon Ingredients

Next, pour in the vanilla and gradually beat in the sugar one tablespoon at a time. Beat the mixture at a high speed until you get very stiff peaks when you lift up the whisk. Now, remove the bowl from the stand mixer and pour in the coconut. With a spoon, mix it all together. Line some cookie sheets with wax paper. With rounded teaspoonfuls, drop the mixture onto the baking sheets.

Make Chocolate Macaroons

For chocolate macaroons, add melted dark chocolate to the batter before putting the batter on the sheet. Since I'm only using half the batter, I'm adding 1 square of melted dark chocolate to this portion. I'm also going to use a plastic bag to help shape my macaroons. As I squeeze, I'm making cookie-sized drops onto the pan.

Bake the Macaroons

Bake for about 20 minutes. Immediately remove from the cookie sheets and put them on wire racks. Allow the macaroons to cool completely and then carefully remove from the wax paper.
