Transcript:How to Make Bacardi Rum Bundt Cake

Hi, I'm Stephanie Gallagher for, and today, we're making a Bacardi rum cake. Let's get started.

Ingredients for Rum Bundt Cake

For this recipe, you will need:
  • 1 cup chopped walnuts
  • 3 cups flour
  • 2 cups sugar
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 cup butter, softened
  • 4 large eggs
  • 1/2 cup milk
  • 1/2 cup rum

Before Making Rum Bundt Cake

Preheat the oven to 325 degrees F. Spray a 10-inch Bundt pan with cooking spray. Put a little flour in the pan, and turn it to coat the pan on all sides. Pour out the excess flour.

Now spread the walnuts in the bottom of the Bundt pan.

Making the Rum Bundt Cake

Place the flour, sugar, baking powder and salt in a large bowl and whisk them together. Add the softened butter, and beat on low speed with an electric mixer until the dry ingredients are coated with the butter and the mixture becomes like coarse crumbs.

Place the eggs in a medium bowl. Add the milk and rum and whisk them together. Add the egg mixture to the dry ingredients, and beat on low speed until incorporated.

Pour the batter into the prepared Bundt pan on top of the nuts, spreading with a spatula to even it out.

Bake for 55-60 minutes, until a knife inserted in the cake comes out clean.

Ingredients for the Rum Bundt Cake Glaze

Now for the glaze, you'll need:
  • 1/2 cup butter
  • 1 cup sugar
  • 1/4 cup water
  • 1/2 cup rum

Instructions for Making the Rum Bundt Cake Glaze

Melt the butter in a medium saucepan. Add the sugar and the water, and stir constantly while the glaze comes to a boil. Let it boil for 5 minutes, then remove from the heat. Stir in the rum - you might want to step back a bit, as it will cause some steam to come up at you - then keep stirring until it forms a thick glaze.

Spoon the glaze over the cake - you can prick the cake with a fork a few times to let the glaze seep in. And then use a pastry burnish to scoop up some of the glaze that falls in the middle and brush it on.
